Sunday nights usually include a glass of wine at my house once my daughter is in bed for the night.
I head back to the kitchen to wrap up any more culinary duties and occasionally crave something sweet to go with my Sunday treat drink.
So tonight, as I was struck by the need for a warm, homemade cookie but wanted something easy, quick and healthy- I found this recipe and decided to give it a whirl! (Thank you Sesame Street and Cookie Monster.)
Super Simple, 5 Ingredient, Gluten Free Cookie Recipe:
1/2 cup of Peanut Butter
1/3 cup of Sugar (I used whatever I had on hand)
1 Egg
A very healthy dash of Cocoa Powder (guestimating 1/3 cup)
A good sprinkle of Cinnamon (depends on how you and your family like it)
~ Preheat oven to 350* (it was so hot here today, I used my mini-countertop oven. Perfect for making these cookies quickly!)
Directions:
-Put all the ingredients in a food processor and process until dough becomes a ball. (Very Quick)
-Transfer to the freezer, covered, for 10 minutes.
-After 10 minutes, roll cookies out onto parchment lined baking sheets.
-Add chocolate chips, chocolate chunks and/or nuts. Be creative & add whatever your family likes.
-Place in the oven for 8-10 minutes.
-Once baked, remove and let cool – without moving them! – for another 10 minutes.
Then devour!
They are delicious, easy and almost a little brownie-like. The batch I made gave us 11 small, delicious cookies.
