I don’t know about you ladies, but I am really looking forward to fall. This heat has been getting to me lately and I am ready to cuddle up with blankets, scarves and sweaters. (Yes, I know we live in San Diego, but a girl can dream of cooler weather, right?!) The only thing I will miss about summer are warm evenings with my blueberry faux-jitos. I concocted this recipe while pregnant with my son and have been drinking it ever since when I want a refreshing and festive drink with none of the booze. This is the perfect drink to enjoy while pregnant because it contains ginger, which fixes just about any bout of nausea you might be having, or while breastfeeding since you won’t have to worry about getting tipsy from having too many.
The recipe is very simple and all of the ingredients can be purchased at nearly any grocery store. You will need:
Ingredients:
- Mint (just a few sprigs)
- Blueberries
- A lime or two (in case you want more than one)
- Ginger beer or ginger ale (Q Ginger is a favorite, but any will do)
- Ice cubes
Supplies:
- Highball glass
- Muddler
This recipe couldn’t be easier.
Grab a few leaves of mint and tear them into small pieces in the bottom of your glass.
Add a handful of blueberries and add the squeezed juice of one lime. Feel free to use less lime juice if you’d prefer your drink to be less tart.
Muddle the blueberries, mint and lime juice together until the blueberries are nice and pulverized. (If you have a fussy toddler, an uncooperative teen or even a sassy husband, feel free to give those blueberries a few extra punches with the muddler).
Add a few ice cubes. Fill the rest of your glass with ginger beer or ginger ale.
Stir and enjoy!
For some fun variations, substitute the blueberries with strawberries or peaches. Cheers!
