Slow Cooker Mexican Chicken: Tacos for Family Taco Night

Ingredients:

3 Chicken Breasts

½ Tbsp Olive Oil

¾ Cup Mild or Medium Picante Salsa

1 14.5oz Can Fire-Roasted Diced Tomatoes 

1 Tbsp Chili Powder

½ tsp Salt

1 tsp Cumin

1 tsp Garlic Powder

Instructions

  1. Place Olive Oil in the bottom of a slow cooker, and add the chicken breasts. Turn the chicken breasts over so they are layered with oil on all sides. 
  2. Add all remaining ingredients to slow cooker, and mix the ingredients well. 
  3. Cover and cook on low for 5-6 hours, or on high for 3-4 hours
  4. When chicken is done, it will be tender and easily shreddable with a fork. Shred the chicken, and mix with the liquid/juices.
  5. Serve with your favorite accompaniment. You can keep this chicken refrigerated for 3 days after cooking, or freeze in an airtight container for up to 3 months
